在威海荣成,有这样一种海鲜,只有经过腌制后才能上桌,而且腌制的时间越久,鲜味儿越沁入人心。它就是胶东特产,蠓子虾酱。蠓子虾酱是用小虾加入盐,经发酵磨成粘稠状后做成的酱类食品。

蠓子虾酱距今已有两千多年历史,雍正年间,登州知府将其作为地方特产贡奉给朝廷,被赐名为“宫内御品”。2009年,蠓子虾酱制作技艺入选山东省第二批非物质文化遗产代表性项目保护名录。

Then the fermented shrimp paste ill gradually bee sticky and silky, ith ater getting precipitated.Once the sauce is ready, the next step is to drain the shrimp oil. After separating the shrimp oil from the sauce, the rest is the shrimp paste e are aiting for.The shrimp paste is purple-red in color, sticky in texture, refreshing in smell. It is delicate and has moderate saltiness.
美味的虾酱是鲜虾、海盐、阳光、时间和匠心创造出来的精华。它由海中一种呈灰色半透明状、大小不足一厘米的小虾——蠓子虾制作而成,这种小虾的优点是水分少、无杂质、味道浓郁。蠓子虾加盐搅拌,经过短暂的晾晒,之后便是一段时间的发酵,发酵好的虾酱,变得粘稠细腻,水分渐渐析出。酱做好了,下一步就是漉虾油,将虾油分离出酱之后,剩下的就是蠓子虾酱。虾酱颜色紫红,呈黏稠状,气味鲜香,酱质细腻,咸度适中。
